Kafal is a tiny little berry, astringent and very sour, loaded with health benefits. Most people aren’t familiar with this delicious fruit since it grows only the lower Himalayas. Those of us who grew up in the Kumaon and Garhwal regions looked forward to the 20 days in a year when these little berries would be available, at the onset of summer.This vinegar is all the more special to us because it comes from that integral part of our childhood and so many others who are now strewn across the globe.

The Kafal is sourced from villages in the Kumaon region of Uttarakhand, primarily the districts of Nainital and Almora. A subtle flavour of the fruit and tartness that could wake a dead man. We do not use any yeasts fir the fermentation process. We do not pulp or juice our fruits but allow the entire fruit to ferment slowly and naturally over two months.

Raw, unfiltered, with mother.

Vegan with no preservatives, additives or flavour enhancers of any sort.

Ingredients: Raw kafal vinegar made from wild bayberries (kafal) sourced from villages in the forests of the Kumaon region of Uttarakhand.

How to store: Keep away from direct sunlight. Store in a cool, dry place. Refrigerate once opened.

Shelf life: 36 months.
