Growing up we ate copious amounts of something called Guava Cheese, popular in Goa but we demolished this candy-esque delight in the foggy environs of Nainital, Uttarakhand. This product of ours is a salute to those memories and that flavour. No, it isn’t guava cheese but a preparation just one stage short of it.
Guavas (always the winter ones, they have better flavour) cooked in water, pureed and then cooked down with sugar (somethings just need sugar and that’s alright, in moderation) and some lemon juice. It’s a slow process of making but one worth every spoonful.
Useable in different ways. Our favourite though goes a bit like this: grab a toast, butter it and then add a healthy smear of guava spread top that with another healthy smear of feta cheese. Simple and delicious.
